Einkorn flour is made from ancient wheat which has stood the test of time to deliver natural flavour alongside added health benefits.
Matthews Einkorn flour has a flavour that can be compared to modern wheat but with richer undertones of nut and a more toast-like essence. Einkorn is perfect for rustic bakes or comfort food like banana bread and pancakes.
Emmer Flour
Wholegrain Emmer flour is perfect for creating pasta, sourdough or bread recipes with a little bit of blending. Although not gluten-free, it does have a weaker gluten presence, which means the dough will need to be soft and pliable before baking, not overworked to be super stretchy.
Heritage Bibury Barley Flour

When it comes to multigrain flour, we believe in choice. Multi grain flour is such a wholesome, strong flour it is rightly one of the best-selling varieties we create.
We offer five varieties of multigrain flour, each with its own unique properties. Cotswold Crunch Flour is a beautiful blend of strong bread flour, malted wheat flakes and malt flour. This creates flour with a darker colour and a lovely nutty taste. Our other crunch flour is called Ancient Cotswold Crunch Flour and is one for the artisans. It is stone ground with three unique ancient grains which create a genuinely unique taste profile and light tasty bread.
We also offer an eight-grain flour made up of wheat, oat flakes, millet seed, rye flakes, maize grits, linseed, millet seed and sunflower seed. This gorgeous flour creates delicious multigrain bread that looks as good as it tastes. This is so popular we also have a 16kg sack available!
Our organic seven-seed mix flour may have one less seed/grain, but it packs just as much punch. This is a lovely flour to blend with another strong white flour, helping create a lighter loaf with all the goodness preserved.

Organic, light and dark, malted, spelt & rye blends
Matthews Rye Flour comes in multiple varieties, guaranteed to create a wonderful-tasting bake. Our rye flour is lovingly crafted in the Cotswolds through our partnership with farmers near Stow-on-the-Wold.
Rye flour offers opportunities to create light or dark bakes by using the different types of rye flour. Light rye flour has a lighter grey colour than wholegrain rye due to the stone ground milling process removing some of the bran. The stone ground milling does not remove all of the bran as some minerals and vitamins will remain from the bran and germ. Removing the bran makes the dough less dense and easier to work.
Our dark rye flour is milled from 100% rye berry, preserving the bran and germ within the flour, creating that lovely rich dark colour and nutty taste.
Our malted rye flour contains rye flakes. Malted rye flour is a rich and dark flour that smells amazing when baked due to the malted rye flakes. You can create denser loaves or mix this with other flour to craft a lighter but equally tasty bake.
Finally, our spelt and rye flour is a perfectly blended flour of wholegrain Cotswold rye and Cotswolds light spelt flour. Together they produce a lighter wholemeal blend full of texture, nutrition and flavour.

The history of Spelt Flour
Spelt Flour is known to have been cultivated between 6000 to 9000 years ago. This is why it is often referred to as an ancient grain. Other ancient grains include Einkorn and Emmer. Although not as old as either Einkorn or Emmer, Spelt has arguably been more consistently used throughout time.

Working with spelt farmers locally and across the UK allows us to share a de-hulling plant at one farm. We then use 100-year-old pine bins to condition the collected spelt to perfection. Once conditioned, we mill the spelt into the different types of spelt flour we offer.

When it comes to structure and chew, the Matthews Cotswolds strong flour range comes into its own. Strong white flour is used to create products which require good structure and consistency, like sourdough bread, pretzels and bagels.
Strong flour tastes similar to other flours and has a slightly off-white colour. This flour also feels coarser and denser. Strong flour has a higher protein content, so you'll need good arm strength for all the kneading required, but the effort is well rewarded.

Some roller mills will extract the germ and bran from the grain and then only add a small percent back into the mix. At Matthews, we make sure we retain 100% of these most nutritious parts of the grain in our flour. Matthews plain flour is a multi-purpose (all-purpose for the US) flour perfect for baking bread, cookies, biscuits, muffins and pizzas. The plain flour name comes about from the lack of any raising agent within the flour, as would be found in self-raising flour.
Plain flour is a staple of every kitchen. Its versatility will help you bake delicious creations. But all plain flour is not the same. Plain flour comes in different protein levels, usually between 9-11%, has varying textures and tastes and can be created from either hard or soft wheat.
