Spelt flour is an ancient grain that has been cultivated by people for thousands of years. Its value has not diminished over time, just perhaps people’s knowledge of it. At Matthews Cotswolds Flour, we appreciate its history and have developed Spelt Flour for the modern baker.

Benefits of using Spelt Flour in baking

  • Spelt flour can be recognised for its sweet and nutty flavour. This flavour adds an extra depth to baking and is perfect for making cookies, waffles, bread and muffins.

  • Spelt flour is full of nutrition and is an excellent source of fibre, carbs and protein. It also contains vitamins B1, B6 and E.
     
  • Helping reduce the risk of stroke, heart attack, type 2 diabetes, and some cancers is also a wholegrain benefit associated with Spelt Flour.
     
  • Spelt Flour is a multi-purpose flour. It can be used for a multitude of different bakes and recipes and is a flour every serious baker owns. Also, adding 20% spelt flour with your Pizza or Tipo 00 flour into your pizza dough will work wonders. 

The history of Spelt Flour

Spelt Flour is known to have been cultivated between 6000 to 9000 years ago. This is why it is often referred to as an ancient grain. Other ancient grains include Einkorn and Emmer. Although not as old as either Einkorn or Emmer, Spelt has arguably been more consistently used throughout time.

Why chose Matthews Spelt Flour

Working with spelt farmers locally and across the UK allows us to share a de-hulling plant at one farm. We then use 100-year-old pine bins to condition the collected spelt to perfection. Once conditioned, we mill the spelt into the different types of spelt flour we offer.

Matthews Spelt Flour is a local and UK product created using techniques which stay true to the ancient taste and benefits offered by Spelt Flour.

*Spelt Flour has lots of health benefits. It has high levels of gluten, so should not be used by those with an intolerance to gluten or irritable Bowel Syndrome (IBS)
