Seeded Skillet Soda Bread
Ingredients
400g Matthews Cotswold Organic Seven Seed Flour
260ml whole milk (or plant milk equivalent)
Juice of 1 whole lemon
1 teaspoon salt
1 & ½ tablespoon honey (or maple syrup)
1 heaped teaspoon bicarbonate of soda
Makes: 1 loaf

Bake time: 30-35 mins

Method:
- Preheat the oven and cast iron skillet to 200°C/180°C fan/gas mark 4 - this will also work with a simple baking tray or Dutch oven if you don’t have a skillet, just make sure it’s preheating with the oven
- Add the lemon juice to the milk and let sit while you weigh the other ingredients.
- Mix the flour, salt, and bicarbonate of soda together
- Mix the honey in with the milk mixture
- Combine the wet and dry ingredients and mix gently to form a very soft dough - do not knead this dough
- Tip out onto a well floured surface and shape into a round before placing into your preheated skillet or tray
- Dust the top with flour and press a knife or wooden spoon handle across to divide into 4 sections
- Bake for around 30-35 minutes, turning occasionally to get an even colour
- Remove from the pan when cooled slightly
