Milling and Grain Provenance: We source our soft wheat from our local Cotswold Grain Partnership. The fields surrounding the mill are great for soft wheat flour. We prepare our grain in 100-year-old pine wood bins before milling. Soft wheats are best for culinary flour like Plain Flour, Pastry Flour, Cake Flour and Self-Raising Flour. All of our flour is unbleached flour.

Did you know: Our Cotswold Plain flour in 16KG bakers bag version is called Rollright after a local village where the ancient Rollright stones lie on top of the hill. Paul Matthews names all the local Cotswold Flours after the original places the grain came from over the last 200 years.
