Another in our rediscovered Fit for a King recipes cache, this delicious Fresh Strawberry Couronne recipe is another super dish to try with tennis season upon us. Huge thanks to Steph Clubb for this inspiring dish!

Fresh Strawberry Couronne Method:
- Cream egg yolks, vanilla and sugar, beat in the butter, sift in the flour and baking powder, mix everything together, cover and chill the dough for 10 minutes.
- Meanwhile grease a 20cm loose bottom tin and place a 9cm chef ring in the centre of the tin. Oven on at 180'C fan.
- Press the dough evenly into the tin and around the chef ring. Bake for 20 minutes, remove from the oven and leave to cool in the tin.
- Whip the cream together with the icing sugar and orange extract, place the cream into a piping bag. Wash and slice the strawberries in half.
- To assemble: place blobs of cream all around the sable ring, then place strawberries in hand around the cream. Finish with a few edible flowers or pigs of mint. Keep in the fridge until you're ready to eat.
