This delicious Strawberries and Cream Blondies Recipe has been sent to us from Matt “Mattaroons” Othold. Made with our Regenerative All-Purpose White Flour, it’s a fantastic easy bake that has to be tried!

Strawberries & Cream Blondies Method:

  1. Wash and trim the tops off your strawberries, cut into half and place in pan with 2 tbsp caster sugar and 2 tbsp water. Cook on medium high heat for approx. 10 mins until reduced to thick sticky coulis. Pour into a bowl to cool down and use later.
  2. In a large bowl mix together your caster sugar, light brown sugar & melted unsalted butter till thickens, this will take approx. 5mins.
  3. Add in your eggs, one at a time fully mixing each one in before adding the next one.
  4. Add in your vanilla and mix through.
  5. Sieve in your flour and gently mix through till just incorporated, don’t over-mix.
  6. Add in your white chocolate and freeze-dried strawberries and fold them through.
  7. Pour into lined 9” x 9” square tin smoothing out to all corners and sides.
  8. Dollop on top in teaspoons of clotted cream randomly on top of the Blondie.
  9. Then dollop on top the cooled strawberry coulis & swirl through the clotted cream onto the top of the Blondie.
  10. Bake in a preheated 160°C fan oven for approx. 30-35 mins, don’t over bake but enough so it’s set in the middle. Leave to cool room temp 1hr, then 4hrs in the fridge but ideally overnight so it gets really fudgy, cut up and enjoy!
