Cranberry Crumble Bars Recipe Baking Method
Prepare the Dough:
- Preheat the oven: Set it to 190°C (Gas mark 5) to ensure it's hot and ready.
- Mix the ingredients: In a mixing bowl, combine 225 grams of softened butter, 90 grams of granulated sugar, and 320 grams of all-purpose flour. Use your hands to blend until the mixture forms a soft dough. The warmth from your hands helps bring the dough together.
- Divide the dough: Split the dough into two equal portions—one for the crust and one for the crumble topping.
- Prepare the pan: Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving a slight overhang for easy removal. Press half of the dough evenly into the pan with your fingers, then smooth it out with the back of a spoon.
Blind Bake:
- Bake the crust: Place the pan in the preheated oven and bake for 15 minutes, or until the edges are lightly golden. This step helps prevent a soggy base once the filling is added.
Prepare the Cranberry Filling:
- Cook the cranberries: In a medium saucepan over low to medium heat, combine 300 grams of fresh cranberries, 60 grams of granulated sugar, and 1 teaspoon of lemon juice. Let it simmer for 10 minutes, stirring occasionally, until the cranberries soften and burst.
- Thicken the mixture: Dissolve 3 tablespoons of cornflour in 5 tablespoons of water. Stir this slurry into the cranberry mixture while it’s still on the heat. Cook for 2 minutes until thickened.
- Optional smoothness: For a jam-like consistency, use an immersion blender to purée the filling. Let it cool slightly before assembling.
Assemble the Bars:
- Layer the filling: Spread the prepared cranberry mixture evenly over the baked crust.
- Add the crumble: Take the remaining dough and crumble it over the cranberry filling. Pinch small pieces with your fingers for a rustic look.
Bake Again:
- Final bake: Return the pan to the oven and bake for 35 minutes, or until the crumble topping is golden brown.
Cool and Serve:
- Cool completely: Allow the bars to cool fully in the pan before slicing. This ensures the filling is set, making it easier to cut.
- Serving suggestions: Slice into squares and serve plain, or pair with a scoop of vanilla ice cream, a hot coffee, or tea.
