Cinnamon Bun Focaccia



Ingredients
For the Focaccia Dough:
- 375g water
- 1 tbsp sugar
- 100g active starter
- 500g Cotswold Pizza Flour
- 10g salt
- 25g lukewarm water
- 2 tbsp olive oil
For the Toppings:
- 50g dark brown sugar
- 80g unsalted butter, melted
- 3 tbsp cinnamon
For the Frosting:
- 80g icing sugar
- 1 tsp vanilla extract
- 20g water

Cinnamon Bun Focaccia Recipe Method:
- Take your active starter and ensure that it has risen to its peak level and is ready to use - I use the float method!
- First place 375g water and sugar into your bowl and then add your active starter, stir until it looks milky. Then add your Cotswold Pizza Flour and combine, at this stage it might look a bit shaggy that's okay! Let it rest for 30 mins.
- After 30 mins add the salt and the 25g of water and squeeze this in, cover and let it rest for 30 minutes.
- Now the 4 sets of stretch and folds start, take one hand and stretch each side of the dough into the middle. Leave 30 minutes rest in between each fold.
- With the last 30 mins rest prepare the (32cm x 25cm) baking tin, line it with greaseproof paper and olive oil.
- Place the dough into the lined tin and gently stretch it, at this point it doesn't matter if it reaches the sides. Cover with oiled cling film and place in the fridge overnight for 12 - 14 hours.
- In the morning the dough should have risen and be ready for the final proof at room temperature, this should be about 4 hours or when the dough is no longer cold to the touch.
- While the dough is rising combine the melted butter, sugar and cinnamon, and preheat the oven to 200 degrees Celsius.
- Pour the cinnamon sugar mixture oven the dough and dimple until the top is bubbly and the cinnamon mixture is combined throughout, then bake in the preheated oven for 35 minutes.
- Remove from the oven let it cool a little and then drizzle over the icing mixture, remove from the tin and enjoy!
