Baker: Omer Tekgul

Makes: 1 loaf
Prep time: 15 Minutes
Bake time: 45-50 Minutes
Flours used: Matthews Cotswold Heritage Barley

Method:
  1. Preheat the oven to 175°C. Grease a 23 x 12 cm loaf pan. Line the bottom and two long sides of the pan with a piece of parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, seasonings, salt and pepper. Beat the butter in a second bowl and add the egg and continue beating. Pour the mixture over the dry ingredients and mix using a spatula just until combined. Fold in cheese and ham. Transfer the dough to the prepared bread pan. Use the spatula to level the surface.
  3. Bake for about 45-50 minutes until the bread rises and turns golden and a toothpick inserted in the centre comes out clean. Remove from the oven and let cool for 15 minutes.
  4. Slice the bread and reheat at room temperature or in a 150°C oven for 10 minutes before serving.
