Kat's White Chocolate Christmas Cookies
Ingredients
For the Cookies:
- 250g Plain Flour
- 125g Butter softened, unsalted
- 125g Caster sugar
- 75g Light brown soft sugar
- 1 Egg large
- 1 tsp Vanilla extract
- ½ tsp Baking powder
- ¼ tsp Bicarbonate of soda
- ¼ tsp Salt
- 200g White chocolate chips
- 50g Red, white and green Christmas sprinkles
For Decoration:
- 75g White chocolate, melted
- 1 tbsp Red, white and green Christmas sprinkles

White Chocolate Christmas Cookies Baking Method:
- Pre-heat your oven to 180C Fan/400F/Gas Mark 6.
- Ideally using a stand mixer with the paddle attachment, mix the butter, caster sugar and light brown soft sugar together until fluffy.
- Add the egg and vanilla extract and mix to combine.
- Add the plain flour, baking powder, bicarbonate of soda and salt and mix in.
- Add the white choc chips and the sprinkles, and mix in.
- Divide the dough into 12 portions.
- Roll the dough portions into balls using your hands, place them onto a lined baking tray, leaving space between them to spread.
- Bake for 12 minutes, remove from the oven and leave the cookies to cool for at least 10 minutes on the baking trays before moving to a cooling rack.
