Eton Mess White Chocolate Brownies Recipe
Another Fit for a King recipe that got mislaid, and a brilliant strawberry-packed bake to enjoy alongside Wimbledon. Huge thanks to Annie Mae Herring for sharing! This sweet bake is great for a summer celebration of any kind, and well worth trying at home!

Eton Mess White Chocolate Brownies Method:

Grease and line an 8” inch baking dish with parchment paper. Preheat your oven to 180C/160 Fan.

Melt the butter and 180g white chocolate together in the microwave in x3 30 second blasts. Allow to cool slightly.

In a bowl, add all the ingredients together and gently fold together until combined. Scrape the batter into your prepared pan.

Bake for 22-25 minutes. Cool in the pan for 10-12 minutes then transfer onto a wire rack. Crush 1 meringue over the top and serve. I like to add mine to the fridge to set for a few hours, but it is also delicious and warm.
