Eton Mess White Chocolate Brownies Recipe

Ingredients:

  • 120g Salted Butter
  • 180g High Quality White Chocolate, finely chopped
  • 40g Blonde/Caramel Chocolate Chips (you can use white chocolate too)
  • 1 Large Egg
  • 1 Tin of Condensed Milk
  • 180g Plain Flour
  • 1 Tbsp Vanilla Bean Paste
  • 6g Flaked Salt
  • 5 Strawberries OR raspberries, finely chopped
  • 2 Meringues, crushed + 1 for garnish

Eton Mess White Chocolate Brownies Method:

  1. Grease and line an 8” inch baking dish with parchment paper. Preheat your oven to 180C/160 Fan.

  2. Melt the butter and 180g white chocolate together in the microwave in x3 30 second blasts. Allow to cool slightly.

  3. In a bowl, add all the ingredients together and gently fold together until combined. Scrape the batter into your prepared pan.

  4. Bake for 22-25 minutes. Cool in the pan for 10-12 minutes then transfer onto a wire rack. Crush 1 meringue over the top and serve. I like to add mine to the fridge to set for a few hours, but it is also delicious and warm.
