Regen Soft White Floured Baps Method:
- In a jug, combine the milk with the hot water and set aside. Weigh out the rest of the ingredients into the bowl of a stand mixer fitted with a dough hook attachment.
- Add the liquid, then set the mixer going on a slow speed for 5 minutes. Following this turn the speed up to a medium setting and knead for a further 7 minutes. Cover the dough in the bowl and leave to rise for 1 hour.
- Tip the dough out onto a clean countertop and use a bench scraper or a sharp knife to divide it into 10 equal portions. Use a cupping motion with your hand against the countertop to shape each piece into a smooth ball. Leave to rest on the countertop for 10 minutes.
- After the rest, gently flatten each dough ball with a rolling pin to a height of 1 inch. Place the flattened rolls onto a lined baking tray and generously flour the tops. Cover and leave to rise for another 1 hour and preheat the oven to 210 degrees Celsius.
- Bake the baps for around 20 minutes, or until they are well risen and golden on the top. Then, when baked, place onto a wire rack to cool and cover them immediately with a tea towel. This ensures that the baps stay soft rather than going crusty.
- Allow to cool before slicing and filling!
