Kefir Plum Cake Recipe

Ingredients:
  • 300g Matthews Cotswold All Purpose Flour or Matthews Plain Flour
  • 100g granulated sugar (I like to use half white and half brown)
  • 250g plain kefir
  • 125ml neutral oil (avocado, canola, or light olive oil)
  • 3 large eggs
  • 500g fresh plums, halved and pitted
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting

  • 2 ½ cups Organic all-purpose flour
  • ½ cup granulated sugar I used equal parts white and brown sugar.
  • 1 cup plain kefir
  • ½ cup neutral oil (avocado, canola, or light olive oil)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1.1 lbs fresh plums, halved and pitted
  • Powdered sugar for dusting

The fruit turns out so sweet and juicy in the oven, and when paired with kefir, you get a cake that stays moist and soft with minimal effort".

Kefir Plum Cake Method 

  1. Preheat the oven to 350°F (180°C). Line an 8x12-inch pan with parchment paper for easy removal.
  2. In a large bowl, whisk the eggs and sugar for a few minutes until pale, thick, and frothy. You can use a hand whisk or an electric mixer.
  3. Add the kefir, oil, and vanilla, mixing until the batter is completely smooth.
    Sift the flour, baking powder, and baking soda into the bowl. Gently fold everything together with a spatula until just combined. A few small lumps are fine—don’t overmix.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. Place the plum halves on top of the batter, cut side up, and gently press them in.
  6. Bake for about 40–45 minutes, or until a toothpick inserted into the centre (avoiding the plums) comes out clean or with a few crumbs.
  7. Let the cake cool completely in the pan. Once cooled, dust with powdered sugar, slice, and serve.
