Regenerative Chocolate Fudge Cake Method
- Preheat the oven to 180 degrees Celsius and grease and line 2 deep cake tins, or 4 shallow cake tins. I like to use 2 deep 6 inch cake tins, but use whichever size you have!
- Get all the cake ingredients into the bowl of a stand mixer fitted with a paddle attachment and mix on a slow speed at first to get everything blended, then turn the speed up to medium and mix until you don’t see any lumps - this will make a fairly runny cake batter. Scrape the bowl down and mix again one final time.
- Deposit the cake mixture evenly between the tins, and bake for 40-55 minutes. If you see the cakes getting too dark, you can cover them with tin foil to prevent any further browning - but you will trim the tops so don’t worry about it too much! The cakes are done when a skewer inserted comes out clean.
- Leave the cakes to cool in their tins for 10-15 minutes, then carefully turn them out onto a wire rack to cool completely.
- To make the buttercream, start by creaming the butter and icing sugar for at least 10 minutes - this will make sure that the buttercream isn’t grainy and is super light and fluffy!
- Add in the cocoa powder and scrape down the bowl before mixing again for a good 5 minutes. If the buttercream seems a little stiff, add in some milk 1 tablespoon at a time. This is better a little softer so if in doubt, add the milk!
- Once the cakes are completely cooled, trim the tops off to make them level (if you used a deeper cake tin, you can also now cut each of the cakes in half to make 4 layers).
- Sandwich the cake layers with the prepared buttercream, and either leave the edges bare or cover them in buttercream for maximum wow-factor!
