Method:
- Add your flour, salt, sugar, and baking powder to a large mixing bowl, then crack in your two eggs. Use a whisk to combine these until there are no lumps. Slowly drizzle in the milk, stopping to whisk it in completely every now and then. You should then have a thick pancake batter.
- In a non stick frying pan, melt together the butter and sugar for the bruléed banana slices. Once the sugar starts to caramelise, turn the heat down to low and add your banana slices. Make sure to only cook them on one side so you get the best caramelisation without overcooking them.
- Get another non-stick pan on to a medium heat, and grease it very lightly with vegetable oil. Use a couple of tablespoons to deposit the pancake batter into the pan, then immediately top with your caramelised banana slices - make sure that they are brown side up for the best appearance.
- Once you can see that the top of the pancake is mainly set, go ahead and flip it! Let it cook for a further couple of minutes to get a nice brown colour, then move to a plate ready to serve!
